Soups and stocks
Whenever I start a social dinner with soup, Josephone always looks arch and quotes Queen Victoria, who apparently said that 'One should never start dinner on a lake'. But then Vicky was something of a thicky (with a weakness for ghillie's willies)...
Soups
- Strawberry Soup - A cold soup for warm spring evenings. And before you start making a fuss, it IS unreservedly delicious.
Stocks
The basis for all soup, of course, is a good stock. So here are some good stocks. The best stock of all, to my mind, is chicken stock made from the carcase of a well rotisseried chook bought from the Lebanese broaster up the road and eaten the night before, hot and crispy-skinned, with Arabic bread and humous. But as it is statistically unlikely that you have a Lebanese broaster up the road, you'll just have to use some saggy old carcase you've got hanging around...
