Stilton Fingers

It's a great insult: Oi! You! Yes, you! Stilton fingers!

 

Ingredients

 

  • 8 thin slices white bread
  • 400g smoked streaky bacon
  • 200g blue cheese

 

This is a Dutch recipe, stolen from a friend without a qualm. Remove the crusts from the slices of bread, and lay thin slices of the blue cheese (no more than half a centimetre thick) on top of one slice, adding another on top to create a blue cheese sandwich. Press down on the sandwich, not too firmly, to compress the cheese and then slice the bread into 2 cm wide fingers. Cut across these slices so that each finger measures approximately 2cm x 4cm. Repeat for the rest of the bread and cheese.

Cut the streaky bacon rashers in two, thin them by drawing along the top of them with the back of a knife, and wrap one of these slices around each stilton sandwich, securing with a cocktail stick. Place the sticks on a baking sheet in a pre-heated oven set to 400F, gas mark 6, for 20 minutes, then lift out using a spatula to unstick any crispy cheese bits that have stuck to the sheet and serve warm.
